Air fried salmon hibachi

Air-fried salmon hibachi by Amy Howard

Ingredients

  • 1.5 cups cooked rice
  • One salmon filet, washed and patted dry.
  • One zucchini
  • One onion
  • Fresh mushrooms to equal the zucchini
  • 2 tbsp oil (olive, vegetable, canola)
  • 2 tbsp butter
  • 2 tbsp soy sauce
  • 2 tbsp lemon or lime juice

Instructions

  1. Cut the onion into bite-sized pieces.
  2. Pour about two tablespoons of oil into a large mixing bowl. Swirl to spread it around.
  3. Toss the onions till they are coated in oil.
  4. Air fry the onions on a solid tray until they are almost translucent (about 8 minutes).
  5. Meanwhile, chop the zucchini and mushrooms into bite-sized pieces.
  6. Transfer the half-cooked onions back into the mixing bowl. Add the mushrooms and zucchini and toss them all together.
  7. Air fry all of the vegetables on the tray until they look exactly the way you want (about 10 minutes).
  8. Meanwhile, in a small frying pan on medium-low, melt two tablespoons of butter.
  9. Add the soy sauce, lemon or lime juice, and enough salt and pepper for the entire meal. Swirl to mix well.
  10. Lay the salmon in the butter sauce, skin side up if there is skin. Cover the pan.
  11. Warm the rice and spread it across a plate.
  12. When the salmon is done, remove the skin and crumble fish across the rice.
  13. When the vegetables are done air frying, toss them in the butter mixture. Then pour them on top of the salmon.
  14. Enjoy.
