Ingredients
- 1.5 cups cooked rice
- One salmon filet, washed and patted dry.
- One zucchini
- One onion
- Fresh mushrooms to equal the zucchini
- 2 tbsp oil (olive, vegetable, canola)
- 2 tbsp butter
- 2 tbsp soy sauce
- 2 tbsp lemon or lime juice
Instructions
- Cut the onion into bite-sized pieces.
- Pour about two tablespoons of oil into a large mixing bowl. Swirl to spread it around.
- Toss the onions till they are coated in oil.
- Air fry the onions on a solid tray until they are almost translucent (about 8 minutes).
- Meanwhile, chop the zucchini and mushrooms into bite-sized pieces.
- Transfer the half-cooked onions back into the mixing bowl. Add the mushrooms and zucchini and toss them all together.
- Air fry all of the vegetables on the tray until they look exactly the way you want (about 10 minutes).
- Meanwhile, in a small frying pan on medium-low, melt two tablespoons of butter.
- Add the soy sauce, lemon or lime juice, and enough salt and pepper for the entire meal. Swirl to mix well.
- Lay the salmon in the butter sauce, skin side up if there is skin. Cover the pan.
- Warm the rice and spread it across a plate.
- When the salmon is done, remove the skin and crumble fish across the rice.
- When the vegetables are done air frying, toss them in the butter mixture. Then pour them on top of the salmon.
- Enjoy.
